RECIPE: SALTED CHOCOLATE GRANOLA

Ingredients

½ cup quinoa
½ cup oats
1/3 cup shredded coconut
1/3 cup pecans
2 tbsp honey
1 tbsp coconut sugar
1 tbsp coconut oil
1 tsp cacao
Pinch of sea salt
Optional: dark chocolate chips

Method

  1. In a bowl, melt the coconut oil and mix with the honey, coconut sugar and cacao.
  2. Pour the quinoa, oats, pecans and coconut into the bowl and mix well until it’s all coated.
  3. Put on greaseproof paper on a baking tray, sprinkle the sea salt and cook for 15 minutes at 180°C – check regularly and turn every 5 minutes to avoid any burning (the coconut is particularly susceptible), or until browned.
  4. Once cooled you can stir in the dark chocolate chips if desired.
