Recipe: Beetroot Hummus

I have always found it quite tricky to make hummus as tasty as it can be bought (my favourite is Booths..YUM) but this time, I nailed it – if I do say so myself!

The combination of cumin and horseradish goes so well with beetroot, it’s a dream.


400g (1 can) chickpeas

1 beetroot, roasted

1 tbsp beetroot powder (or another roasted beetroot)

Juice 1/2 lemon

2 tbsp tahini

2 tbsp horseradish

1 clove garlic

1 tbsp cumin

50ml extra virgin olive oil (plus extra to drizzle)

Generous pinch of salt

All you need to do is combine all ingredients in a high speed food processor and mix until it reaches a smooth consistency.

Enjoy with crisps, pitta or inspiral kale chips like I did.
